What is a fat separator, and what is its role and importance in the kitchen?

A fat separator is an underground tank customized according to the size of the business and in accordance with the requirements of the Ministry of Health and the Ministry of Environmental Quality. It is where all the sewage lines from the kitchen are separated, and after the separation, the liquid is either fatty or clean. The clean liquid flows into the municipal sewage system, while the fatty residue remains in the tank and is removed by a private wastewater service.

In Israel, there is a requirement for any restaurant, catering service, food production facility, or kitchen that consumes more than 5 cubic meters of water per day to install a fat separator before discharging wastewater into the municipal sewage system. This is done to capture the fats and solids from the wastewater.

So how do you calculate the volume of a grease trap?

The Ministry of Environmental Protection offers a formula (according to the EN 1825-2:2002 standard) for calculating the size of a conventional grease trap to customize grease separators for businesses based on the number of meals served per day.

The business owner must not discharge oil/grease into the municipal sewage system. It is mandatory to have a certified grease separator installed according to legal requirements. Additionally, the business should retain disposal and reception certificates for a period of three years.
